When using the iM2 with Garage Band, it only records in mono. Can you record in stereo? 

Yes, press the button in the top left corner to select stereo mode (Left Channel is the default).

Can I monitor my recording using an iM2 with the iPod Touch 4G? 

The iM2 covers the headphone jack of the iPod Touch 4G, so monitoring while recording is not possible with this unit. 

I upgraded the PCM Recorder app to version 1.0.3, and it no longer works on my Apple device. 

PCM Recorder version 1.0.3 requires iOS6 or later.
